KEFIR – der Trank der Hundertjährigen

Der Milchkefir, auch als "Milchchampagner" oder "Tibetanischer Pilz" bezeichnet, ist ein Getränk, welches seine Wurzeln in Asien, vermutlich Russland hat.

Kefir ist ein erfrischendes, probiotisches Getränk mit einer dicklichen cremigen Konsistenz und einem säuerlich erfrischenden, leicht hefigem Geschmack. Entstehen tut es durch die Fermentation von Milch. Dies geschieht mithilfe von unseren Kefirknollen. Dabei handelt es sich um eine natürliche Zusammensetzung aus Hefen und Bakterien in symbiotischer Gemeinschaft. Diese kleinen Mikroorganismen verstoffwechseln Bestandteile der Milch.
Geschmacklich erinnert das Getränk an Ayran oder Buttermilch. Die natürlich entstehende Kohlensäure sorgt für ein perlendes, moussierendes Geschmackserlebnis.

Das selber machen lohnt sich übrigens schon nach kurzer Zeit: Die Kefirkultur vermehrt sich nämlich immer weiter. Außerdem schmeckt der eigene Milchkefir viel frischer, ist preiswerter und lebendiger als Fertiggetränke aus dem Supermarktregal. Und: Kefir hat unendlich viele Gesichter. Je nachdem wie lange man fermentiert oder welche Milchsorte man benutzt, erhält man immer wieder ein neues Geschmackserlebnis. Und seien wir mal ehrlich: Selbstgemacht schmeckt immer am besten!
